Ingredients
Scale
- 2.5 lbs chicken thighs boneless skinless
- 2 tablespoons brown sugar
- 2 teaspoons kosher salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- ½ teaspoon chili powder
- 3 tablespoons avocado oil
- 1 cup homemade southern bbq sauce
Instructions
- Combine chicken thighs with brown sugar, kosher salt, garlic powder, onion powder, smoked paprika, chili powder, and avocado oil in a large bowl. Mix well to marinate, and let sit for at least 4 hours or overnight in the fridge.
- Take the marinated chicken out of the fridge 30 minutes before cooking.
- Preheat your grill to medium-high heat while the chicken comes to room temperature.
- Place the chicken thighs on the grill and lower the heat to medium. Close the lid and grill, turning occasionally, until charred with grill marks.
- Once nearly cooked, baste each chicken thigh with BBQ sauce and move them to indirect heat to allow the sauce to soak in while finishing the cooking process.
- Check the internal temperature, ensuring it reaches 175-190°F for dark meat or 165°F for white meat. Remove from the grill and serve with extra BBQ sauce.
Notes
For best flavor, marinate the chicken overnight.
Adjust the heat to ensure the chicken cooks thoroughly without burning the sauce.
Feel free to use store-bought BBQ sauce if time is short.
