- 2 lb cod filets
- ½ cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon ground pepper
- 1 teaspoon paprika
- 1 teaspoon dried Italian seasonings
- 2 whole eggs
- 1 cup panko breadcrumbs
- 1 teaspoon dried parsley
- 2–3 tablespoons olive oil
- chopped parsley, to garnish
- lemon wedges, to garnish
Instructions
- Preheat the oven to 400 degrees F.
- Use a kitchen towel to pat dry the cod fillets and set them aside.
- Prepare the breading station: In a bowl, combine flour, salt, garlic powder, ground pepper, paprika, and Italian seasoning.
- In another bowl, whisk together eggs and a splash of water until well combined.
- In a third bowl, mix panko breadcrumbs and dried parsley.
- Coat the cod fillets in the flour mixture, dip them in the egg mixture, and then coat with the breadcrumb mixture.
- Place the coated fillets on a baking tray lined with parchment paper and spray them with cooking spray.
- Bake in the oven for 12-15 minutes, or until cooked through and coated golden brown.
- Garnish the baked cod with chopped parsley and serve with lemon wedges.
Notes
Feel free to adjust seasoning to taste for a personalized flavor.
For extra crunch, you can broil for the last couple of minutes of baking.
