Description

Baked Cod With Panko Bread Crumbs is a delightful dish combining tender cod filets with a crispy panko crust. Quick to prepare, it’s perfect for a healthy and satisfying meal any night of the week.


Ingredients

  • 2 lb cod filets
  • ½ cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon ground pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried Italian seasonings
  • 2 whole eggs
  • 1 cup panko breadcrumbs
  • 1 teaspoon dried parsley
  • 23 tablespoons olive oil
  • chopped parsley, to garnish
  • lemon wedges, to garnish

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Use a kitchen towel to pat dry the cod fillets and set them aside.
  3. Prepare the breading station: In a bowl, combine flour, salt, garlic powder, ground pepper, paprika, and Italian seasoning.
  4. In another bowl, whisk together eggs and a splash of water until well combined.
  5. In a third bowl, mix panko breadcrumbs and dried parsley.
  6. Coat the cod fillets in the flour mixture, dip them in the egg mixture, and then coat with the breadcrumb mixture.
  7. Place the coated fillets on a baking tray lined with parchment paper and spray them with cooking spray.
  8. Bake in the oven for 12-15 minutes, or until cooked through and coated golden brown.
  9. Garnish the baked cod with chopped parsley and serve with lemon wedges.

Notes

Feel free to adjust seasoning to taste for a personalized flavor.
For extra crunch, you can broil for the last couple of minutes of baking.
Serve with a side of mixed greens for a complete meal.
