- 8 chicken thighs (bone-in, skin-on)
- 2 tablespoons extra virgin olive oil
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 ½ teaspoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
Instructions
- Preheat the oven to 425°F (220°C). Allow the chicken thighs to come to room temperature and pat dry with a paper towel.
- In a small bowl, mix together all the herbs and spices to create the seasoning.
- Place the chicken in a large mixing bowl, drizzle with olive oil, and add two-thirds of the spice blend. Coat the chicken well, including under the skin.
- Set the chicken on a rack placed over a baking sheet and sprinkle the remaining spice mix on top.
- Bake the chicken thighs for 35 to 40 minutes or until the internal temperature reaches 170°F. Optionally, broil for an extra 2 to 3 minutes for a crispier top. Let rest for 5 minutes before serving.
Notes
Make sure to thoroughly coat the chicken for maximum flavor.
Allowing the chicken to rest before serving helps the juices redistribute for juicier meat.
