This Avocado Dressing features a smooth blend of ripe avocado, zesty lemon, and fresh cilantro. It’s an effortless way to elevate your salads or serve as a dip, making meals healthier and more delightful!

- 1 ripe avocado
- 1/4 cup white wine vinegar
- 1 lemon – juice only
- 1 garlic clove
- 3/4 cup avocado oil
- 2 tbsp agave nectar
- 2 tbsp cilantro (or basil, or parsley)
- coarse kosher salt to taste
Instructions
- Ensure you have a blender or food processor with an opening for adding ingredients while blending.
- Halve the avocado, remove the pit and skin, then add the avocado flesh to the blender or food processor.
- Add white wine vinegar, lemon juice, agave nectar, garlic clove, cilantro, and salt to the blender but do not add the oil yet.
- Close the lid and blend while slowly drizzling in the avocado oil until fully incorporated. Blend for a few more seconds afterward.
- Check the dressing's consistency and taste. If you prefer a thinner dressing, add more avocado oil (up to 1/4 cup) and blend again.
Notes
Use a ripe avocado for the best flavor and texture.
Feel free to substitute the herbs with basil or parsley based on your preference.
The dressing can be stored in the refrigerator for a few days.
