Description

These Apple Pie Overnight Oats are a delightful blend of flavors that combine the freshness of apples with oats for a healthy meal. Perfect for breakfast, this simple dish is ready in minutes, providing a comforting taste that will leave you satisfied and happy.


Ingredients

  • ½ cup chopped apple, about 1/2 a large apple
  • 1 teaspoon maple syrup
  • pinch of cinnamon
  • ½ cup old fashioned oats
  • ½¾ cup unsweetened almond milk
  • ¼ cup plain greek yogurt or coconut yogurt
  • 2 teaspoons maple syrup, honey or your favorite sweetener
  • ½ teaspoon vanilla
  • ½ teaspoon cinnamon, or apple pie spice
  • Toppings: cinnamon apples, nut butter, chopped nuts, chia or hemp seeds

Instructions

  1. In a small microwave-safe bowl, mix chopped apple, maple syrup, and cinnamon. Heat for 30-60 seconds until softened. Cool and reserve 1/4 cup for topping.
  2. In a jar, combine oats, almond milk, yogurt, maple syrup, vanilla, and cinnamon.
  3. Stir in 1/4 cup of the cinnamon apples into the oat mixture. Secure the lid and shake gently to combine.
  4. Refrigerate overnight, or at least for 30-60 minutes if preparing in the morning.
  5. Before serving, remove the lid, add extra yogurt or almond milk if needed, and top with the reserved apples and your favored toppings like nut butter or nuts.

Notes

You can use any type of sweetener you prefer, such as honey or agave.
Adjust the thickness of the oats by adding more almond milk or yogurt as desired.
Feel free to mix in other toppings like seeds or dried fruit for added texture.
