Description

Ingredients

  • 1/3 cup butter
  • 1/3 cup brown sugar
  • 1/3 cup sugar
  • 1/3 cup heavy cream
  • 1/2 tsp vanilla
  • 3 cups flour
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 1/2 cups oil
  • 1 1/2 cups sugar
  • 1/2 cup brown sugar
  • 2 tsp vanilla
  • 3 eggs
  • 4 cups apples, peeled & chopped

Instructions

  1. Preheat the oven to 325°F. Spray a 9 x 13 inch pan with non-stick spray and set aside.
  2. In a small bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, combine the oil, sugar, brown sugar, vanilla, and eggs. Whisk together until well mixed.
  4. Gradually mix the dry ingredients into the wet ingredients until fully combined.
  5. Peel and chop enough apples to make 4 cups. Gently fold the apples into the batter.
  6. Pour the batter evenly into the prepared pan and bake for 50 minutes, or until a toothpick inserted in the center comes out clean.
  7. While the cake bakes, prepare the glaze by combining the butter, brown sugar, sugar, heavy cream, and vanilla in a saucepan over medium heat.
  8. Stir frequently until the mixture reaches a simmer. Remove from heat and allow to cool for 5 minutes.
  9. Pour the glaze over the warm cake.

Notes

This cake can be served warm or at room temperature.
For an extra layer of flavor, consider adding chopped nuts to the batter.
Storing leftovers in an airtight container will keep the cake moist for several days.
