- 1 cup peeled cored, and chopped apples (½” pieces)
- ⅛ teaspoon ground cinnamon
- 1 tablespoon dark brown sugar
- 1¼ cups all-purpose flour
- ¾ teaspoons baking powder
- ¼ teaspoon kosher salt
- ½ teaspoon ground cinnamon
- ⅛ teaspoon ground nutmeg
- ½ cup unsalted butter melted
- ¾ cups dark brown sugar packed
- 1 large egg room temperature
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- ¼ teaspoon vanilla extract
- ½ teaspoon cinnamon
- 2 tablespoons milk
Instructions
- In a frying pan over medium heat, combine the prepared apples, dark brown sugar, and ground cinnamon. Cook while stirring occasionally for about 5 minutes until the apples soften. Transfer the apples to a plate to cool.
- Preheat your oven to 350°F (175°C). Grease and parchment-line an 8×8” pan with overhangs for easy removal.
- In a large bowl, mix the all-purpose flour, baking powder, kosher salt, ground cinnamon, and ground nutmeg together.
- In another bowl, whisk together the melted unsalted butter, packed dark brown sugar, room temperature egg, and vanilla extract until smooth.
- Combine the wet ingredients with the dry ingredients, using a rubber spatula to fold until almost all flour is incorporated. Gently mix in the cooled apples and their juices.
- Spread the batter evenly in the prepared pan. Bake for 18-22 minutes until the top is lightly browned, being careful not to overbake.
- Allow to cool completely on a wire rack before icing.
Notes
For added flavor, you can sprinkle some chopped nuts on top before baking.
These blondies can be stored in an airtight container for up to a week.
The use of fresh apples gives the best results, but you may experiment with different apple varieties.
