Instructions
- Chop the potatoes into halves, quartering any extra large ones, and place them in a large bowl. Cover with cold water and soak for 30 minutes.
- Drain and rinse the potatoes under fresh water.
- Thoroughly dry the potatoes, then mix them in a bowl with the Greek salad dressing and seasoning, tossing to coat well.
- Spray the air fryer basket with non-stick spray and add the coated potatoes. Air fry at 400 degrees for 20 minutes, shaking the basket every 5 minutes for even cooking.
- Taste the potatoes and adjust seasoning with extra Greek seasoning if desired. Garnish with fresh parsley and a squeeze of lemon juice before serving.
