Experience mouthwatering Air Fryer Greek Roasted Potatoes that are easy to make. With just a simple mix of yukon gold potatoes, Greek dressing, and seasonings, this dish offers irresistible flavor for a quick dinner or healthy meal.


Ingredients

  • 3 pounds baby yukon gold potatoes
  • ¼ cup greek salad dressing
  • 1 1/2 teaspoons greek seasoning blend
  • ½ lemon juice of
  • Fresh minced parsley for garnish

Instructions

  1. Chop the potatoes into halves, quartering any extra large ones, and place them in a large bowl. Cover with cold water and soak for 30 minutes.
  2. Drain and rinse the potatoes under fresh water.
  3. Thoroughly dry the potatoes, then mix them in a bowl with the Greek salad dressing and seasoning, tossing to coat well.
  4. Spray the air fryer basket with non-stick spray and add the coated potatoes. Air fry at 400 degrees for 20 minutes, shaking the basket every 5 minutes for even cooking.
  5. Taste the potatoes and adjust seasoning with extra Greek seasoning if desired. Garnish with fresh parsley and a squeeze of lemon juice before serving.
