Ingredients

  • 1 cup diced apples
  • 3 tablespoons packed brown sugar
  • ½ teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • 1.5 teaspoons baking powder
  • ½ teaspoon sea salt
  • 1 cup 2% blended cottage cheese
  • ¼ cup powdered sugar
  • 1 tablespoon almond milk, plain, unsweetened

Instructions

  1. Preheat the air fryer to 375℉.
  2. In a bowl, combine diced apples, brown sugar, and cinnamon, tossing well to coat the apple pieces.
  3. Add flour, baking powder, and salt to the bowl, stirring until mixed.
  4. Incorporate the blended cottage cheese and mix with a wooden spoon or silicone spatula until a ball forms.
  5. Knead the dough by hand in the bowl and then transfer it to a lightly floured surface, cutting it into 4 pieces.
  6. Shape 2 fritters on parchment paper, pressing down to achieve a round fritter form.
  7. Air fry at 375℉ for 4 minutes, flipping and air frying for another 4 minutes until fully cooked.
  8. Prepare the glaze by whisking powdered sugar and almond milk together in a bowl.
  9. Dip cooked fritters in the glaze and place them on a wire cooling rack.
  10. Let the glaze set for a few minutes before enjoying.
