- 1/4 cup (60 ml) whipping cream or heavy cream
- 4 ounces (112 grams) full-fat cream cheese
- 1/3 cup (56 grams) white chocolate chopped and melted
- 1/2 cup (120 grams) plain greek yogurt
- 1/2 cup (60 grams) fresh or frozen raspberries mashed with a fork
- fresh raspberries for garnish, optional
Instructions
- In a small bowl, use an electric mixer to beat the cream until stiff peaks form, being careful not to over mix.
- In a separate medium bowl, mix the cream cheese and melted white chocolate together with the same beaters. Add the Greek yogurt and combine well, then incorporate the mashed raspberries.
- Gently fold in almost all of the whipped cream, reserving a tablespoon for topping. Keep the mousse light and airy. Spoon the mixture into two serving glasses and chill until ready to serve, for up to eight hours.
- Just before serving, top with the reserved whipped cream and garnish with raspberries if desired.
Notes
For a lighter texture, be gentle when folding the whipped cream into the mixture.
Chilling the mousse enhances its flavor and texture, making it smoother and more enjoyable.
Using fresh raspberries will give a brighter flavor, but frozen raspberries work just as well.
