Instructions
- Preheat your oven to 450°F (232°C) and prepare a large baking sheet with parchment paper.
- In a large pot, bring about 4 cups of water with a pinch of salt to a boil.
- Add the peeled sweet potatoes to the boiling water and cook for 10 to 12 minutes, until they are about two-thirds cooked.
- After cooking, let the sweet potatoes cool slightly before grating them into a large mixing bowl.
