- 3 lbs frozen meatballs
- 20 oz can pineapple chunks drained with juice reserved
- 1 red bell pepper chopped
- 1 ½ cups bbq sauce
- ¼ cup brown sugar
- 3 tablespoons soy sauce
- 2 tablespoons white vinegar
- 4 garlic cloves minced
- ¼ teaspoon ginger powder
- 2 tablespoons green onions for topping
Instructions
- Place the frozen meatballs, pineapple chunks, and chopped red bell pepper in the slow cooker.
- In a mixing bowl, whisk together the BBQ sauce, brown sugar, white vinegar, soy sauce, minced garlic, and ginger powder. Pour this sauce over the meatballs.
- Cover and cook on LOW for 4–5 hours or on HIGH for 2–3 hours until the meatballs are heated through and reach an internal temperature of 160°F.
- Stir well to coat the meatballs in the sauce, then top with sliced green onions before serving.
Notes
Feel free to adjust the sweetness by adding more or less brown sugar according to your taste.
For an extra touch, you can add crushed red pepper flakes for some heat.
