Description

Ground Turkey Egg Roll Bowls are a quick and delightful dish packed with flavor and fresh ingredients. This easy recipe combines ground turkey, colorful veggies, and mouthwatering sauces for a healthy meal in no time. Perfect for a busy weeknight dinner!


Ingredients

  • 1 tbsp olive oil
  • 3 green onions, chopped, separated whites from greens
  • 1 lb ground turkey
  • 16 oz cole slaw mix
  • 1 cup shredded carrots
  • 34 garlic cloves, minced
  • 1 inch ginger grated
  • ¼ c plus tbsp low-sodium soy sauce
  • 2 tsp sriracha
  • 12 tbsp sweet chili sauce
  • 1 tbsp toasted sesame oil
  • ⅓ cup chopped cilantro
  • ½ tsp pepper
  • ½ tsp salt, more or less to taste

Instructions

  • Heat olive oil in a large sauté pan over medium-high heat. Sauté the chopped whites of the green onions for 1-2 minutes.
  • Add ground turkey, breaking it into smaller pieces. Cook until browned and no longer pink, then add minced garlic and ginger in the final minute.
  • Stir in cole slaw mix and shredded carrots along with soy sauce. Cook for 4-6 minutes until vegetables are tender, stirring often.
  • Reduce heat to low. Mix in sriracha, sweet chili sauce, sesame oil, greens from the green onions, and cilantro. Adjust seasoning with salt and pepper, adding more soy sauce if needed.
  • Serve warm, topped with additional cilantro and sesame seeds.

Notes

Feel free to adjust the spice level by adding more or less sriracha.
For a vegetarian option, substitute ground turkey with crumbled tofu or tempeh.
