Ingredients

  • 1/2 cup butter
  • 1 tsp garlic minced
  • 1 cup heavy whipping cream
  • 1 cup half and half
  • 1/2 teaspoon italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups freshly grated parmesan cheese
  • up to 1/4 cup hot milk or pasta water (optional)
  • 1 pkg fettuccine noodles – cooked to package directions
  • freshly chopped parsley for garnish

Instructions

  • Melt the butter in a large skillet over medium-high heat and add minced garlic. Let it simmer for about a minute.
  • Stir in the heavy cream and half and half, then whisk until combined and bring to a gentle simmer.
  • Mix in the Italian seasoning, salt, and pepper.
  • Stir in the Parmesan cheese, allowing it to melt slowly while mixing.
  • Once the cheese is melted and the sauce is smooth, whisk in small amounts of hot milk or pasta water until you achieve your desired consistency.
  • Toss the sauce with the cooked fettuccine noodles and garnish with freshly chopped parsley as needed.

Notes

Add more parmesan for a richer flavor if desired.
For a spicier kick, include a pinch of red pepper flakes.
This sauce can be stored in the refrigerator for up to 3 days.
