  • 2/3 cup cottage cheese blended
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut sugar
  • 1/4 cup maple syrup
  • 1/2 cup almond flour
  • 1/3 cup cacao powder
  • 1/4 tsp baking soda
  • 1/3 cup chocolate chips (semi-sweet, dark chocolate or milk chocolate)

Instructions

  1. Preheat your oven to 350°F and prepare an 8×8-inch baking dish with parchment paper or grease it well.
  2. Blend the cottage cheese until smooth, achieving a thick yogurt-like consistency, and set aside.
  3. In a mixing bowl, whisk together the eggs, vanilla extract, coconut sugar, and maple syrup, then stir in the blended cottage cheese until combined.
  4. Incorporate almond flour, cacao powder, and baking soda into the mixture to form a smooth brownie batter.
  5. Fold in chocolate chips, setting a few aside if you prefer a bakery-style finish.
  6. Transfer the batter into the prepared baking dish, spreading evenly, and top with the remaining chocolate chips if desired.
  7. Bake for 24–26 minutes, or until a toothpick comes out mostly clean with a few moist crumbs.
  8. Allow the brownies to cool in the pan for 15–20 minutes before slicing, as they will continue to set.

Notes

Feel free to substitute coconut sugar with regular sugar if preferred.
These brownies are best enjoyed within a few days but can be stored in an airtight container for up to a week.
